O gura de “Supa Alba”

Supa Nsala sau Supa Alba este reteta de supa delicioasa, rapida si usoara care isi are originile in zonele fluviale ale Nigeriei.

Supa Nsala este perfecta pentru zilele mai ploioase si reci datorita gustului sau picant. Deoarece este foarte usoara de preparat puteti fi siguri ca daca sunteti plictisiti si nu vreti sa stati ore intregi pregatind masa puteti sa preparati aceasta supa delicioasa foarte usor.

Ingredientele de care aveti nevoie sunt:

1 peste Somn: bucati groase de 4 inci

Frunze Utazi uscate sau proaspete (Gongronema latifolium)

Aglutinant: Cartofi Dulci Cruzi Albi/ Praf de Cartofi Dulci / Piure de Cartofi

Habanero sau ardei iuti: pentru gust

Sare (pentru gust)

1 pumn de rac

1 cub de Maggi / Knorr

1 Ogiri Okpei ( condiment traditional nigerian)

Ingrediente alternative pentru Supa Nsala

Puteti folosi de asemenea si tipar (Congrio in spaniola) in loc de somn. Cumparati partea din jurul cozii deoarece piesele de acolo sunt mult mai mici si nu au gauri mari in ele.

Atunci cand folosesti praf de cartofi dulci ca si aglutinant, mixati praful cu apa fierbinte mai intai ca sa creati o pasta limpede (este ca si cum ati face piure de cartofi) inainte sa-l adaugati in supa. Adaugarea prafului direct in supa va face supa sa aiba o consistenta asemanatoare terciului si va fi plina de bulgari.

Inainte sa gatiti Supa Nsala, taiati somnul in discuri cilindrice groase de 1 inci si scoateti maruntaiele. Plasati bolul si turnati apa foarte fierbinte pe peste ca acesta sa nu se dezintegreze cand gatiti supa. Lasati somnul in apa timp de 2 minute si apoi spalati-l cu apa rece. De asemenea trebuie sa curatati pestele de orice substanta lipicioasa de pe pielea pestelui.

Fierbeti cateva cuburi de cartofi dulci albi cruzi. Atunci cand devin moi zdrobiti-le cu un mortar si pistil pana cand cuburile se transforma intr-o pasta, apoi puneti-o la o parte. Puteti inlocui cartofii dulci cu praful de cartofi dulci sau cu piureul de cartofi pentru aglutinant.

Spalati si zdrobiti / amestecati frunzele utazi, ardeii iuti si racul trebuiesc pusi la o parte. Utazi este mai bun amar si poate fi folosit doar ca si condiment asa ca una sau doua frunze sunt destule, mai ales daca folositi frunze proaspete.

Instructiuni pentru Gatire

Puneti racul intr-o oala si turnati destula apa cat sa acoperiti complet pestele. Adaugati condimentele si gatiti pana este gat. Puteti adauga daca vreti si carne de vaca si peste uscat la aceasta reteta.

Atunci cand somnul este aproape gata adaugati crabul, piperul si frunzele utazi. De asemenea adaugati pasta de cartofi dulci si sare pentru gust.

Somnul face din Supa Nsala o delicatesa, ii ofera gustul unic care este esential pentru aceasta reteta. Singurul alt peste care are un gust asemanator somnului pentru aceasta reteta este tiparul.

Acoperiti oala si permiteti continutului sa se gateasca pana cand pasta de cartofi dulci se dizolva complet. In timp ce gatiti, daca va ganditi ca pasta de cartofi dulci face supa mult prea densa atunci puteti scoate cateva un pic din ea inainte sa fie si restul dizolvat.

A Taste of “White Soup”

Nsala soup or White Soup is a tasty, fast and easy soup recipe that has its origins in the riverine areas of Nigeria.

Nsala Soup is perfect for a cold rainy day due to its spicy taste. Because it is so easy to prepare, you can count on it to save the day when you run out on soup a few days before the big soup day!

The ingredients you will need include:

Cat Fish: 4 one-inch thick pieces

Fresh or dry Utazi Leaves (Gongronema latifolium)

Thickener: Raw White Yam / Yam Powder / Potato Puree

Habanero or chilli peppers: to taste

Salt (to taste)

1 handful crayfish

1 stock cube (Maggi / Knorr)

1 Ogiri Okpei (Nigerian traditional seasoning)

Alternative Ingredients for Nsala Soup

You can use Conger Eel (Congrio in Spanish) instead of Cat fish. Buy the part towards the tail because the pieces youll get from there are smaller and do not have large holes in them.

When using yam powder as thickener, mix the powder with hot water first to make a thick smooth paste (as if you are making pounded yam) before adding it to the soup. Adding the powder directly into the soup will make the soup mushy and you may end up with lumps.

Before you cook Nsala Soup, cut the catfish into 1-inch thick cylindrical discs and remove the intestines. Place in bowl and pour very hot water on the fish. so that the fish does not disintegrate while cooking the soup. Leave for about 2 minutes and wash the fish with cold water. You should also wash off any slimy substance on the outer skin of the fish at this time.

Boil a few cubes of raw white yam. When soft, pound with a mortar and pestle till a smooth paste is formed, then set aside. You can substitute white yam with yam powder or potato puree for the thickening.

Wash and pound/blend the utazi leaves, the chilli pepper and the crayfish and set aside. Utazi is bitter in taste and only used for flavouring so one or two leaves should be enough especially when using the fresh leaves.

Cooking Directions

Place the catfish in a pot and pour enough water to cover the fish. Add the seasoning and cook till done. Feel free to add beef and dry fish to this soup recipe.

When the catfish is almost done, add the crayfish, pepper and utazi leaves blend. Also add the yam paste in small lumps and salt to taste.

Catfish is what makes Nsala soup what it is, giving it the unique taste that it has so it is essential to this recipe. The only other fish found to be close to Cat fish as regards this recipe is Conger Eel.

Cover the pot and allow the contents to cook at high heat till all the yam paste have dissolved. While cooking, if you think that the yam paste will make the soup too thick, you can remove some that are yet to dissolve.

The Nigerian Nsala Soup is ready to be served with Eba (Garri), Semolina, Amala or Pounded Yam. Wouldn’t you like to have a taste?
